The Fresh Egg is the Best Egg

The key to a good breakfast is a good egg.  The best eggs are laid by your very own chickens! The first time I tasted a fresh egg, I realized that I had to have chickens.  While living in North Carolina we had seven beautiful hens, but they don’t travel well.  It was great to learn that you are allowed to have three chickens here in Portland.  Having chickens has brought us such joy and great tasting eggs.  The difference in flavor is amazing.  Store bought eggs taste bland and flavorless, even the ones that say farm fresh or free range.

Nothing is like harvesting fresh eggs from the chicken coop.  Farm fresh eggs have orange yolks, because of the many extra nutrients they have.  They cook up bright , and the white has a superior texture.  Factory farmed eggs turn a dull grayish color scrambled.   The free range egg stays bright yellow.  The flavor is beyond compare.  Once you go fresh egg you never go back!  If you don’t have the opportunity to have chickens yourself, pick up eggs from a farm stand or farmers market.  Store bought just won’t do.
